The Hotel Bayou was constructed on or about 1919 by Elizabeth and Edwim Piersol of Lancaster, PA. They built the hotel as a luxury hotel for their own business.  The original hotel included a sun parlor, rooftop garden, garage and swimming pool. The hotel was built to accommodate the sport shoters who came to Havre de Grace principally by rail to shoot the canvasback ducks in a form of duck hunting known as sinkboxing. The hotel also accommodated the patrons who attended the spring and fall meet at the Havre de Grace race course.

In 1921, the Peirsols formally cnveyed the premise to the Hotel Bayou Company.  In 1932 a fire erupted in the hotel which bean in the kitchen and quickly went upthe duct which was in a non-opened elevator shaft and the roof caught fire.  The hotel was always always full of peple from the metropolitan Philadelphia, Wilmington and Baltimore areas. People traveled grat distance to come to Havre de Grace to engage professional captains who would take them out hunting and also to enjoy the races at the race track. 

In 1935 the property was sold to John A White of Williamsport, PA. Mr White later sold the property to St. Francis Villa of Maryland, Inc as a home for nuns. They held the property until the 1950's when it was conveyed to the Bayou Villa Apartments. The principal holder was Charles J. Foley, Sr of Havre de Grace. The property was later conveyed to the Mayor and City Council of Havre de Grace.

The Mayor and City Council later conveyed the property to the current owners who developed the old Hotel in to condominimum units.
